Ingrediants include:
1 tablespoon Ground allspice
1 tablespoon Dried thyme
1 1/2 teaspoons Cayenne pepper
1 1/2 teaspoons Freshly ground black pepper
1 1/2 teaspoons Ground sage
3/4 teaspoon Ground nutmeg
3/4 teaspoon Ground cinnamon
2 tablespoons Garlic powder or fresh
1 tablespoon Sugar
1/4 cup Olive oil
1/4 cup Soy sauce
3/4 cup White Vinegar
1/2 cup Orange juice
1 Lime juice
1 Scotch bonnet pepper (habanero)
3 Green onions -- finely chopped
1 cup Onion -- finely chopped
4 to 6 chicken breasts
Steps to preparing this meal:
1- Cut a whole chicken into four quarters and rinse in lime juice and white vinegar. You can also buy chicken already quartered.
2- Rub seasoning salt into the chicken; don't be afraid to use your hands, because they're the only things you can really use.
3- Place chicken in baking dish or casserole dish.
4- Mix onions, sugar, cinnamon , garlic, allspice, and peppers in blender; this is the jerk mixture.
5- Cover chicken with the jerk mixture, and let it marinate for at least 30 minutes in the refrigerator.
6- Preheat oven to about 375 degrees; or, for a delicious grilled jerk chicken, light the barbecue.
7- Cook for approximately 1 hour in the oven or on the barbecue until done. The chicken should be cooked to 180 degrees all the way through.
8-Remove chicken from oven or grill and serve
